Join twowildtides on the country challenge. Each week, we’re going to be heading to a new country (in spirit). Primarily, we’ll be cooking a meal from each country; but we’ll also be watching travel documentaries, reading travel blogs, and listening to music. During the global pandemic, travel was largely inaccessible. We want to reignite our wanderlust, satisfy our travel bug as much as we can, and learn some new things along the way. I have a feeling our bucket list will have a number of items added to it through this experience as well. We created a simple alphabetical spreadsheet with all the countries of the world, and each week we will draw a random number that corresponds with a country on the spreadsheet.

We decided to make Austria’s famous Wiener Schnitzel, which is a dish of breaded and fried veal or pork cutlets. Wiener Schnitzel was rated as Austria’s #1 dish by Taste Atlas, Trip Savvy, Travel Food Atlas, Europe Dishes Magazine, Expatica, and Jetset Times. We followed this recipe from Austria’s official travel website.
Wiener Schnitzel was a quick and easy dish to make. In fact, we’ve received schnitzel-based dishes through Hello Fresh several times and we always love them. It’s satisfying, crispy, and flavorful. The pork was cooked moist and tender. We served ours with a side of green peas and parsley mashed potatoes, which is customary in Austria. We also made parsley potatoes when we cooked our Denmark dish. We will definitely make Wiener Schnitzel again!
