I woke up this morning with an intense craving for pancakes. Fluffy, buttery pancakes with berries and maple syrup. I was planning on whipping up a batch of those banana oat pancakes that are all over Pinterest but soon realized I was out of luck… No eggs. No bananas. I was then faced with a decision: packaged mix or skip the pancakes altogether?
Well, no girl should have to make that awful choice. So I started throwing ingredients together and BAM- delicious pancakes that are packed with healthy fats and protein for a wholesome, energizing breakfast. Check out the recipe below! These pancakes are guaranteed to satisfy the breakfast food craving with a healthier twist. Try different toppings such as greek yogurt, fruit, cinnamon, nut butter, seeds, or honey to add your own flair to this delicious dish.
Ingredients:
3/4 cup gluten-free flour (I used Bob’s Red Mill)
1/2 cup oats
2 tsp baking powder
2 tbsp ground flax seed
1/4 tsp cinnamon
4 tbsp maple syrup
1 cup almond milk
1/2 tbsp water
3 tbsp coconut oil, melted
1/4 tsp vanilla
1/2 avocado, mashed
I recommend mixing the dry ingredients first and then adding the wet ingredients. The batter is fairly runny, so add a small amount of batter to the pan, let it cook, then pour a little more batter on top of that pancake to thicken them up.
