We find ourselves on the go a lot. From the day job to the side hustle to the side side hustle to the volunteering, we don’t get much of a break. We’re always testing new recipes for fast, easy, healthy, and nourishing meals to power our busy bodies.
Lately, we’ve been loving this delicious noodle bowl. It is packed with vitamins, nutrients, whole grains, and healthy fats but is free of sugar, gluten, dairy, and is low in salt. The best part? It takes minutes to make!
First, steam your veggies. You can use any vegetables you please, but we love a good bean-mix. Try edamame, green, and yellow beans. Throw in some baby carrots for extra flavor. Frozen veggies are a great option for people who are always on the go because they won’t go bad and they are just as healthy as fresh if you buy from the right brands.
Next, fry out some salmon and season with a little salt and pepper. We like a smaller portion of fish in comparison to the heaping scoop of vegetables. Salmon is loaded with protein, healthy fats, omegas, and amino acids that your body needs to power through the day.
Finally, cook the noodles. We’ve been loving this Organic Jade Pearl Rice Ramen from Lotus Foods. It cooks in 4 minutes and tastes amazing. It is gluten-free, non-GMO, low-fat, and infused with chlorophyll for an extra nutritious kick. Strain the noodles and put them in a bowl and top with the fish and veggies. Throw some chia or sesame seeds over the top, add a dash of low-sodium soya sauce, and you’ve got a delicious meal. If you need a bit more protein, this dish would also be great with a soft-fried egg.
