These delicious muffins are perfect for picnics and perfect for your health! They are gluten-free, dairy-free, and refined sugar-free. The sunflower butter not only adds a hearty flavor, it also bumps up your intake of protein and healthy fats. The flaxseed is for additional fiber, which has become an important part of my diet lately– I’ve come to realize that it’s hard to get enough of all the good stuff you need in your diet. Balance is key. Keep reading for the full recipe!
Here’s what you’ll need:
2&1/4 cups rolled oats
1 cup sunflower butter
1&1/2 tsp baking powder
1/2 tsp salt
4 tbsp cinnamon
1/4 tsp nutmeg
1/2 cups ground flaxseed
3 apples, chopped
1&1/2 cups almond milk
2 eggs
2 tbsp olive oil
1/2 cup honey
1 tsp vanilla
1 cup sunflower seeds
Finely chop the apples and add them to a large bowl with half the cinnamon, coating the apples.
Mix the wet and dry ingredients in separate mixing bowls.
Combine the wet and dry ingredients, mix thoroughly, then fold in the apples.
Spoon the mixture into a muffin tin with cupcake liners and sprinkle sunflower seeds on the tops of each muffin.
Bake at 350 until golden brown and baked through.
Some might say apple cinnamon is an Autumn flavor. But apple cinnamon with sunflowers? Sunflowers scream summertime. That’s why I say these muffins have no season.
