Need a 30-minute meal for a busy work day? We gotcha covered. Our turkey meatloaf muffin recipe can be thrown together with few ingredients and minimal prep-time. They can even be made in advance and frozen for an even faster meal for when you’re on-the-go! Serve with a side of grains or veggies and voila– a scrumptious and satisfying supper for you and your fam. We love them with roasted asparagus, mashed sweet potato, and boiled brussels sprouts. (And a glass of red wine when we’re feeling fancy.)
Ordinary meatloaf can take a while to cook as it’s much thicker; making it in a muffin pan speeds up the process, plus they’re way cuter. We also like to use turkey instead of beef, as it is a leaner meat. Keep scrolling for the recipe!
In a large bowl, add ground turkey, one finely chopped onion, a cup of flour (we use banana flour, but any regular or gluten-free flour will work), a teaspoon of paprika, a tablespoon of garlic powder, and a pinch of nutritional yeast, salt, and pepper. Mash this together until thoroughly combined.
In a separate bowl, combine a cup of ketchup, 1/2 cup of bbq sauce, 1/4 cup of mustard, and 1/4 cup of coconut palm sugar (you can also use brown sugar).
Grease your muffin tin with coconut oil, pack the muffin cups with the turkey mixture, and top with a spoonful of the sauce. Pop in the oven at 375F for 30-minutes or until cooked through. Enjoy!
