Chia seeds are the perfect addition to smoothies, pasta sauce, yoghurt bowls, and soups because they are tasteless and nutritional. They are packed with omega-3 fatty acids, fibre, protein and antioxidants that will boost your energy and improve your overall gut health. The interesting thing about chia seeds is that they absorb A LOT of liquid, which means they will keep you full longer. However, they can dehydrate you if you aren’t drinking enough water. Since chia seeds absorb so much liquid, they are great for making tapioca-like puddings. Put them in jars for on the go, or bowl them with lots of delicious toppings such as fruit, granola, coconut whip, and nuts! Below are my all-time favourite types of chia seed pudding.
For each recipe, you simply whisk the ingredients until well combined and store in an airtight container for several hours.
Matcha Green Tea Chia Seed Pudding
Made from pure organic matcha powder and honey, this pudding is packed with antioxidants and perfect for when you are feeling under the weather.
- 1/4 cup chia seeds
- 1 cup almond milk
- 3 tbsp honey
- 1 tbsp matcha powder (available at your local health food store)
- 1/2 tsp vanilla extract
Pomegranate Chia Seed Pudding
This light, delicious, fruity pudding is so tasty. I made fresh pomegranate juice by muddling pomegranate seeds and straining the juice through a sieve.
- 1/4 cup chia seeds
- 1 cup almond milk
- 2 tbsp pomegranate juice
- 3 tbsp honey
Lemon Coconut Chia Seed Pudding
Get your dose of vitamin C and D with this pudding! Top with extra shredded coconut or dried coconut chips.
- 1/4 cup chia seeds
- 1 cup coconut milk
- juice of half a lemon
- 1 tsp lemon zest
- 3 tbsp honey
- 1 tbsp shredded coconut
- 1/2 tsp coconut extract
Chocolate Almond Chia Seed Pudding
Satisfy the dessert craving with this protein packed, energizing pudding. Reminiscent of a decadent chocolate mousse, you won’t be able to put it down!
- 1/4 cup chia seeds
- 1 cup almond milk
- 1/2 tsp almond extract
- 1/4 cup cocoa powder
- 1 tbsp almond butter
