Today when I got back from my Moksha hot yoga class I was famished. All that sweating really got my stomach growling! I needed something fresh, healthy, and full of protein and healthy fat to restore the energy I had just burned.
I would call this salad a “leftovers creation” because I literally just through in all the veggies left in my fridge.
I started by smashing 1 ripe avocado in a bowl with salt, pepper, guacamole seasoning, lemon juice, and a pinch of nutritional yeast. Then I added half a can of chickpeas, some diced cucumber, green onion, and a few big chunks of tomato and mixed everything up.
I topped it off with another sprinkle of nutritional yeast. Nutritional yeast has a mildly cheesy flavor (but is dairy and gluten free) and is a wonderful source of vitamin B12, protein, and iron. Nutritional yeast is also known to be an immune booster, perfect for flu season.
This salad turned out to be delicious. I was full without feeling stuffed or bloated, and I didn’t feel hungry again until supper. Enjoy this recipe as a salad, with crackers (because let’s be honest- it is basically a chunky guacamole), or in a sandwich or wrap. You could even make it as a party dip!
